Healthy Breakfast Cookies
We like to call these cookies ‘Breakfast Bikkies!’ They are full of wholesome breakfast ingredients (oats, fruit, nuts), but satisfying like a biscuit…or cookie if you prefer.
What you need:
1 cup of agave
1 cup of butter (can use less)
1 tsp vanilla
3 cups old fashioned oats
1 cup spelt flour
1 tsp baking soda
1 tsp baking powder
1 1/2 cups assorted nuts/dried fruit/chocolate chunks/coconut mixture. (Mixtures I have tried: sunflower seeds, raw pumpkin seeds, coconut, white chocolate, raisins; raw almond slivers, sunflower seeds, chopped cashews, cranberries, coconut.)
Cream the butter and agave. Add oats and dry mixture. Stir in assorted nut/fruit mixture. Scoop on to baking sheet. Bake at 350 degrees for 10-15 minutes depending on the size of the cookie. I think they’re nicer smaller. And that way you also have a chance of the cookies sticking around for twenty-four hours. Trust me, they will go fast.
