Best Carrot Muffins

This is a complicated, but excellent recipe I found while googling spelt carrot muffins. Thank you to author Cassie for these best carrot muffins! Because the recipe is so time consuming, it’s best to double it and make the most of your efforts. Use the muffins as a healthy desert option or as a midmorning snack. Great with a cup of tea or fairtrade organic coffee!

Single batch yields 24 mini muffins.

Flax Mixture:

  • 1 1/2 Tbsp freshly ground flax
  • 1/3 cup unsweetened apple juice

Dry Ingredients:

  • 1 cup whole spelt flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 (heap) tsp allspice
  • 1/4 cup raisins
  • 1/4 cup walnuts
  • 2 Tbsp unsweetened shredded coconut

Wet Ingredients

  • 2 Tbsp oil
  • 4 Tbsp agave nectar
  • 4 Tbsp unsweeted apple butter
  • 1 tsp vanilla
  • 1 cup finely grated carrot (about 2 medium carrots)

Preheat oven to 375F. Lightly coat 24 mini muffin tins with oil and set aside. Combine apple juice and ground flax. Let mixture sit while grating carrots and preparing remaining ingredients. Add all dry ingredients to a large mixing bowl. Add wet ingredients to dry mixture. Mix just to combine. Divide batter into prepared muffin tins. Bake 10-12 minutes and enjoy the best carrot muffins!
