Best Almond Muffins
These flourless almond muffins are a hit with everyone I know! They have no wheat and no refined sugar – though you wouldn’t know it. They satisfy that carbohydrate craving we all experience, despite being loaded with only good things!
- 2 1/2 cups ground blanched almonds
- 1/2 cup light olive oil
- 1/4 cup honey (warm and runny)
- 1/4 unsweetened applesauce
- 1/2 tsp baking soda
- 3 eggs
- 1/8 tsp sea salt
- 1/2 tsp cinnamon
Combine all ingredients to make batter. Use muffin paper cups to line muffin tins or grease the tin and fill half full with batter. Bake at 325 for 15-20 minutes until muffins spring back when pressed. Makes 12 muffins. You can change up the muffins by substituting mashed banana or blueberries for the applesauce.
Serve with a fruit salad or herbal tea…and enjoy. You might want to invite the neighbors (or not)! These flourless almond muffins will be a point of connection for life!
